The farm sits in Macchia Valfortore, in the Molise region. The slopes face the panoramic view over Lake Occhito and the neighbouring region of Puglia.

As the olives shift from green towards black, everything is picked by hand and gathered in the nets under the trees. It takes a few weeks, and the whole village knows when it is on.
Pressed before the day is done
The same evening, the harvest is driven to the press and cold-pressed straight away. No storage, no heat. That is why the oil tastes green, peppery and alive.

A letter from the farm
As summer draws to a close, the grove changes colour. Everything that was dry and green through the summer now turns to autumn hues, and the olives begin to swell in the damp autumn air. As the olives start to shift from green towards black, we pick them by hand. Picking them right in the middle of that colour change gives us the perfect balance between a clear, distinct flavour and a high heat tolerance, so the oil works in both cold and hot cooking. The olives are cold-pressed before the day is over — just a hundred metres or so from where they grow.
Around the house grow figs, cherries, peaches, plums, quince, persimmon, mulberries, raspberries, almonds, hazelnuts and walnuts. Most of it stays on the farm and becomes marmalade, liqueur and other delicious Italian delicacies.
